Start off by melting your chocolate. We used about 8 ounces of milk chocolate for our pops. If you are going to use a block of chocolate like we did, you are going to need to chop it up. A serrated knife is a great choice for chopping up chocolate. Otherwise, chocolate chips will work just fine.
If you are recruiting help from little people, I suggest that you remove the bowl of melted chocolate from the heat and place on the counter. If you notice your chocolate starting to thicken or harden, just place the bowl back on top of the saucepan/simmer water and melt it back down. Next create an assembly line so you can easily hop from chocolate to sprinkles.
